Tasting Notes
Bubbly, crisp and refreshing. Aromas and flavours of citrus (lime, lemon and grapefruit), flint and yeast. A crisp and refreshing finish on the palate. Best serving temperature 6 to 9 C.
Winemaker Notes
This aromatic Sparkling Riesling was made in the Cuvé Close method from fruit harvested from the Niagara Peninsula. Fermented in stainless steel down to dryness. Following stabilization and sterile filtration, the wine base underwent secondary fermentation to 12.9 g/L residual sugar in specialized pressurized tanks followed by battonage.
